Preparation

  1. 1

    Prepare the Chicken

Clean the chicken thighs and cut them into large pieces. Pat them dry with paper towels.

  2. 2

    Chop the Onions

Finely chop the onions until you have about 3 cups.

  3. 3

    Mince the Garlic and Ginger

Mince the garlic cloves and grate the ginger.

  4. 4

    Boil the Eggs

Place the eggs in a saucepan, cover with water, and boil for 10 minutes. Remove from heat, cool, and peel.

Cooking

  1. 5

    Sauté Onions

In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and sauté until they are golden brown, about 15-20 minutes.

  2. 6

    Add Garlic and Ginger

Add the minced garlic and grated ginger to the pot and sauté for another 5 minutes.

  3. 7

    Add Spices and Chicken

Stir in the berbere spice mix, salt, and black pepper. Add the chicken pieces to the pot and stir well to coat the chicken with the spices.

  4. 8

    Incorporate Tomato Paste

Add the tomato paste and stir to combine. Cook for an additional 5 minutes.

  5. 9

    Add Broth

Pour in the chicken broth, bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 30-40 minutes, or until the chicken is cooked through.

  6. 10

    Add Hard-boiled Eggs

Once the chicken is tender, gently add the hard-boiled eggs into the pot, spooning some of the sauce over them. Simmer for another 5 minutes.
