Prepare the Fonduta Sauce

Make the Sauce
In a saucepan, melt the butter over medium heat. Add minced garlic and sauté until fragrant. Pour in the heavy cream and bring to a simmer. Gradually whisk in the white cheddar cheese until melted and smooth. Stir in nutmeg and salt. Keep warm.

Sear the Scallops
Pat the diver scallops dry with a paper towel and season with salt and black pepper. In a large skillet, heat the olive oil over high heat. Once hot, add the scallops and sear for 2-3 minutes on each side until golden brown and cooked through.
Assemble the Dish

Plate the Dish
On a plate, place a generous spoonful of the warm fonduta sauce. Arrange the seared scallops on top of the sauce. Garnish with fresh arugula and drizzle with white truffle oil before serving.
