    Wash and Prepare the Greens

    Thoroughly wash the collard greens under cold running water to remove any dirt or grit. Remove the tough stems from the leaves and chop the leaves into bite-sized pieces.

    Chop the Vegetables

    Peel and chop the onion into small pieces, mince the garlic cloves, and chop the red bell pepper into small cubes.

    Sauté the Vegetables

    In a large pot, heat the olive oil over medium heat. Add the chopped onion, red bell pepper, and minced garlic. Sauté for about 5 minutes, or until the onion becomes translucent.

    Add the chopped collard greens to the pot and stir well to combine with the sautéed vegetables.
