Directions

1

Cook the Arborio Rice

In a saucepan, bring 2 cups of water to a boil. Add 1 cup of Arborio rice, salt, and pepper. Reduce heat to low, cover, and simmer for about 18-20 minutes until the rice is tender and the water is absorbed. Let it cool.

2

Prepare the Filling

Once the rice has cooled, take 1 cup of mozzarella cheese and cut it into small cubes. Set aside.

3

Form the Arancini

With wet hands, take a small handful of rice and flatten it in your palm. Place a cube of mozzarella in the center and mold the rice around it to form a ball. Repeat with the remaining rice and cheese.

4

Bread the Arancini

Set up a breading station with three bowls: one with flour, one with beaten egg, and one with breadcrumbs. Roll each rice ball in flour, dip it in the egg, and then coat it with breadcrumbs.

5

Fry the Arancini

In a deep frying pan, heat the olive oil over medium heat. Fry the arancini in batches, about 4-5 at a time, until golden brown, approximately 3-4 minutes on each side. Remove and drain on paper towels.

6

Serve

Serve the arancini hot with a side of tomato sauce for dipping.
