Red Beans
Soak the beans (preferable)
Rinse the dried beans and remove any debris. Cover with at least 4 cups of water and soak for 6–8 hours or overnight. Drain and rinse before cooking. (If short on time, use quick soak: cover with water, bring to a boil 2 minutes, remove from heat and let sit 1 hour, then drain.)
Brown sausage and build flavor
In a large heavy-bottomed pot or Dutch oven over medium-high heat, add 1 tbs canola oil and 1 tbs butter. When hot, add the sliced andouille and sear until browned, about 3–4 minutes. Remove half the browned pieces (set aside for garnish) and leave the rest in pot to render fat. If using ham hock, add it to the pot now.
Combine beans and seasonings
Add the drained beans to the pot. Pour in 4 cups of chicken or vegetable stock (add additional water if beans are not fully covered by about 1 inch). Stir in bay leaves, thyme sprigs, 1 tbs Creole seasoning, 1 tsp smoked paprika, 1/2 tsp dried oregano, 1 tsp hot sauce, 1 tsp salt, 1/2 tsp black pepper, and 1/2 tsp granulated sugar if using. Bring to a gentle boil.
Simmer slowly
Lower heat so the pot maintains a very gentle simmer. Cover partially (lid ajar) and simmer for 1.5–2 hours, stirring occasionally and checking liquid level. Add more stock or hot water as needed to keep beans just covered — they should be swimming in broth but not dry. If you used a ham hock, remove it after 1–1.5 hours, shred meat off the bone and return meat to pot.
Mash and cream
When beans are tender and beginning to break down, use a potato masher or the back of a ladle to mash about one-third of the beans against the side of the pot to thicken the broth and create a creamy texture. Continue simmering uncovered or partially covered for another 20–30 minutes until beans reach a creamy, stew-like consistency. Adjust liquid to desired thickness.
Finish and adjust seasoning
Stir in the reserved browned sausage pieces, chopped parsley, and sliced green onions. Taste and adjust salt, pepper, and hot sauce as needed. If using file powder, sprinkle up to 1/2 tsp and stir just before serving (do not boil after adding). Remove bay leaves and thyme stems.
Rice
Rinse the long-grain rice under cold running water until the water runs clear to remove excess starch. Drain well.
Once boiling, reduce heat to low, cover tightly, and simmer for 15–18 minutes without lifting the lid, until water is absorbed and rice is tender. Remove from heat and let stand, covered, 5–10 minutes. Fluff with a fork before serving.
To Finish / Serve
Portion rice into shallow bowls. Ladle a generous scoop of creamy red beans over the rice. Garnish with extra sliced green onions, chopped parsley, and a sprinkle of file powder if using. Offer additional hot sauce at the table.
Serve hot with crusty bread or cornbread if desired. Leftovers keep well refrigerated for up to 3–4 days; reheat gently and add a splash of water or stock to loosen.
