Spicy Mayo

Combine mayonnaise, sriracha, Dijon mustard, lemon juice, smoked paprika, and salt in a small bowl. Whisk until smooth and refrigerate while you prepare the burger to let flavors meld (at least 5 minutes).

Remove the 8 oz Angus patty from the fridge and bring to room temperature for 10–15 minutes (this helps it cook evenly).

Season both sides of the patty evenly with the kosher salt and freshly ground black pepper.

Heat a heavy skillet or cast-iron pan over medium-high heat until very hot. Add 1 tablespoon neutral oil and swirl to coat.

Place the patty in the hot pan. Cook undisturbed for 3–4 minutes to develop a good sear.

Flip the patty and cook for another 3–4 minutes for medium doneness (internal temperature about 140–145°F / 60–63°C). Adjust time +1–2 minutes per side for desired doneness.

About 1 minute before you finish cooking, place a slice of American cheese on top of the patty. Cover the pan loosely with a lid to melt the cheese (30–60 seconds). Remove the patty and let it rest for 2–3 minutes.

Bun & Toasting

While the patty is resting, halve the sesame bun. Spread the softened butter evenly on the cut sides.

Return the same skillet to medium heat if needed and place the buns cut-side down. Toast for 1–2 minutes until golden and crisp. Remove from pan.

Vegetables & Assembly

On the bottom bun, spread about 1 tablespoon of the spicy mayo.

Layer the lettuce leaves on the mayo (this creates a moisture barrier).

Place the cheese-topped Angus patty on the lettuce.

Top the patty with tomato slices, red onion slices, and pickle slices in that order.

Spread about 1 teaspoon of spicy mayo on the inside of the top bun, then place the top bun over the assembled burger.

Press gently, slice in half if desired, and serve immediately.
