Prepare the Grits

In a medium saucepan, bring 4 cups of water to a boil. Add the grits and salt, stirring constantly. Reduce heat to low, cover, and cook for about 20-25 minutes, or until thickened, stirring occasionally. Once done, remove from heat and stir in butter. Set aside.

Cook the Vegetables

In a large skillet over medium heat, add a bit of oil. Sauté the diced onions and bell peppers until they are soft and translucent, about 5-7 minutes.

Add the Shrimp

Add the shrimp to the skillet with the sautéed vegetables. Cook until the shrimp is pink and opaque, about 2-3 minutes.

Make the Curry Sauce

Stir in the red curry paste and coconut milk. Simmer for 5 minutes until the sauce thickens slightly. Season with salt and black pepper to taste.

Serve

To serve, place a generous scoop of the grits on a plate, top with the red curry shrimp mixture, and garnish with sliced green onions.
