Method

Preparing the Salmon

  1. 1

    Marinate the Salmon

In a bowl, mix together the olive oil, lemon juice, minced garlic, salt, and black pepper. Place the salmon fillets in the marinade and coat them evenly. Let them marinate for at least 30 minutes in the refrigerator.

  2. 2

    Preheat the Grill

Preheat your grill to medium-high heat (about 375°F to 400°F or 190°C to 200°C).

Grilling the Salmon

  1. 3

    Grill the Salmon

Once the grill is hot, place the marinated salmon fillets skin-side down on the grill. Cook for about 6-8 minutes on each side, or until the salmon flakes easily with a fork and has nice grill marks.

  2. 4

    Rest the Salmon

Remove the salmon from the grill and let it rest for a few minutes before serving.

Preparing the Vegetables

  1. 5

    Prepare the Vegetables

While the salmon is marinating, wash and chop the asparagus, bell pepper, and zucchini into bite-sized pieces.

  2. 6

    Season the Vegetables

In a large bowl, toss the chopped vegetables with olive oil, salt, and pepper to taste.

Grilling the Vegetables

  1. 7

    Grill the Vegetables

Once the salmon is done, place the seasoned vegetables on the grill. Cook for about 5-7 minutes, turning occasionally, until they are tender and slightly charred.

Serving

  1. 8

    Plate the Dish

Serve the grilled salmon fillets alongside the grilled seasonal vegetables on a plate. Garnish with fresh herbs if desired.
