Cake Preparation

    Preheat the Oven

    Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

    Mix Dry Ingredients

    In a large bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Whisk until well combined.

    Add Wet Ingredients

    Add the eggs, milk, oil, and vanilla extract to the dry ingredients. Mix until well combined. Gradually stir in the boiling water until the batter is smooth.

    Bake the Cake

    Pour the batter into the prepared cake pan. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean. Allow to cool completely.

Chocolate Mousse Preparation

    Melt Chocolate

    In a heatproof bowl, melt the dark chocolate over a double boiler or in the microwave. Stir until smooth and set aside to cool slightly.

    Whip Cream

    In a separate bowl, whip the heavy cream until soft peaks form. Set aside in the refrigerator.

    Beat Egg Whites

    In another bowl, beat the egg whites until soft peaks form. Gradually add the granulated sugar and continue beating until stiff peaks form.

    Combine Mixtures

    Gently fold the melted chocolate into the whipped cream. Then gently fold in the beaten egg whites and vanilla extract until fully combined.

    Chill Mousse

    Refrigerate the mousse for at least 2 hours to set.

Chocolate Ganache Preparation

    Heat Cream

    In a small saucepan, heat the heavy cream over medium heat until just simmering.

    Add Chocolate

    Remove from heat and add the chopped dark chocolate. Let it sit for a minute, then stir until smooth and glossy.

    Cool Ganache

    Allow the ganache to cool slightly before using it to top the cake.

Assembly and Serving

    Layer Cake and Mousse

    Once the cake is completely cooled, slice it in half horizontally. Spread half of the mousse on the bottom layer, then place the top layer back on.

    Top with Ganache

    Pour the chocolate ganache over the top of the cake, allowing it to drizzle down the sides.

    Serve with Sauce and Berries

    Serve slices of the cake drizzled with chocolate sauce and garnished with mixed berries.
