Chocolate Mousse Preparation

Melt Chocolate and Butter
In a heatproof bowl, combine 200g of dark chocolate and 50g of unsalted butter. Place the bowl over a pot of simmering water (double boiler method) and stir until melted and smooth. Remove from heat and let it cool slightly.

Whisk Egg Yolks
In a separate bowl, whisk together 4 large egg yolks and 100g of granulated sugar until the mixture is pale and creamy. Stir in 1 tsp of vanilla extract.

Combine Chocolate and Egg Mixture
Gradually add the melted chocolate mixture into the egg yolk mixture, stirring constantly until fully combined.

Whip Cream
In another bowl, whip 300ml of heavy cream until soft peaks form. Gently fold the whipped cream into the chocolate mixture until no streaks remain.

Chill the Mousse
Spoon the chocolate mousse into serving glasses or bowls and refrigerate for at least 2 hours, or until set.

Whip Cream for Topping
In a medium bowl, whip 150ml of heavy cream with 2 tbs of powdered sugar and 0.5 tsp of vanilla extract until soft peaks form.

Serve the Mousse
Once the mousse is set, remove from the refrigerator and top each serving with the whipped cream. Optionally, garnish with chocolate shavings or berries.
