Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.

  2. 2

    Mix Dry Ingredients

In a large bowl, combine all-purpose flour, granulated sugar, baking powder, and salt. Whisk together until well mixed.

  3. 3

    Combine Wet Ingredients

In another bowl, whisk together the melted butter, eggs, vanilla extract, and milk until smooth.

  4. 4

    Combine Mixtures

Pour the wet ingredients into the dry ingredients. Stir until just combined. Do not overmix.

  5. 5

    Fold in Strawberries

Gently fold in the chopped strawberries until evenly distributed.

Baking

  1. 6

    Bake the Loaf

Pour the batter into the prepared loaf pan. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.

  2. 7

    Cool the Loaf

Once baked, remove from the oven and let the loaf cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.

Serving

  1. 8

    Prepare the Whipped Cream

While the loaf is cooling, whip the heavy cream in a mixing bowl until soft peaks form. Gradually add powdered sugar and lemon zest, continuing to whip until stiff peaks form.

  2. 9

    Serve

Slice the cooled loaf and serve with a dollop of whipped cream on top. Optionally, garnish with additional chopped strawberries.
