Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust them with flour. This will help the cakes to release easily after baking.

  2. 2

    Melt Chocolate and Butter

In a microwave-safe bowl, combine the unsweetened chocolate and unsalted butter. Microwave in 30-second intervals, stirring in between, until completely melted and smooth. Allow it to cool slightly.

  3. 3

    Mix Sugar and Eggs

In a separate bowl, whisk together the granulated sugar, large eggs, and large egg yolks until well combined and slightly frothy.

  4. 4

    Combine Mixtures

Gradually add the melted chocolate and butter mixture into the egg mixture, stirring continuously until fully incorporated.

  5. 5

    Add Dry Ingredients

Sift in the all-purpose flour, vanilla extract, and a pinch of salt. Gently fold until there are no visible flour streaks.

Baking

  1. 6

    Fill Ramekins

Evenly divide the batter among the prepared ramekins, filling each about 3/4 full.

  2. 7

    Bake

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is soft.

  3. 8

    Cool and Serve

Remove from the oven and let them cool for 1 minute. Carefully run a knife around the edges to loosen and invert each ramekin onto a plate. Serve warm with a dusting of powdered sugar and a scoop of vanilla ice cream, if desired.
