Preparing the Burger Patty

    Mix the Patty Ingredients

    In a large mixing bowl, combine the ground brisket, salt, black pepper, garlic powder, onion powder, and Worcestershire sauce. Use your hands to mix the ingredients until just combined. Be careful not to overwork the meat.

    Form the Patties

    Divide the mixture into four equal portions and shape each portion into a patty, about ¾ inch thick. Make a slight indentation in the center of each patty using your thumb to prevent puffing during cooking.

    Chill the Patties

    Place the formed patties on a plate and refrigerate for at least 30 minutes to firm up before cooking.

Cooking the Burgers

    Preheat Grill or Pan

    Preheat your grill or a cast-iron skillet over medium-high heat. If using a skillet, add a little oil to the pan to prevent sticking.

    Cook the Patties

    Once the grill or pan is hot, add the patties. Cook for about 4-5 minutes on one side, then flip and cook for another 4-5 minutes, or until the internal temperature reaches 160°F (71°C).

    Add Cheese

    In the last minute of cooking, place a slice of cheddar cheese on each patty and cover with a lid to help the cheese melt.

Assembling the Burger

    Toast the Buns

    If desired, lightly toast the burger buns on the grill or in a toaster.

    Build the Burger

    Spread ketchup and mustard on the bottom half of each bun. Add a lettuce leaf, followed by the cooked brisket patty with melted cheese, tomato slices, pickles, and then top with the other half of the bun.
