Preparing the Short Rib Burgers

Cook the Short Ribs
Preheat the oven to 300°F (150°C). Season the short ribs with salt, pepper, garlic powder, onion powder, and Worcestershire sauce. Heat vegetable oil in a large oven-safe skillet over medium-high heat. Sear the short ribs for 3-4 minutes on each side until browned.

Slow Cook the Short Ribs
Cover the skillet with a lid or aluminum foil and transfer it to the preheated oven. Cook for 2.5 to 3 hours until the ribs are tender and easily pulled apart with a fork.

Form the Patties
Once the short ribs are cooked, remove them from the oven and let them cool slightly. Shred the meat and mix it with the pan juices. Form the mixture into small patties, about 2 ounces each.
Making the House Aioli

Combine Ingredients
In a mixing bowl, whisk together mayonnaise, minced garlic, lemon juice, salt, and black pepper until smooth and well combined.
Assembling the Sliders

Toast the Buns
Lightly toast the mini brioche buns in a skillet or oven until golden brown.

Cook the Burgers
In the same skillet used for toasting, cook the short rib patties over medium heat for about 3-4 minutes on each side until heated through and crispy.

Melt the Cheese
Place a slice of cheddar cheese on each patty during the last minute of cooking to allow it to melt.

Build the Sliders
Spread house aioli on the bottom half of each toasted bun. Add a patty, a handful of fresh arugula, and top with the other half of the bun.
