Method

For the Grilled Trout

  1. 1

    Prepare the Trout

Rinse the trout fillets under cold water and pat them dry with paper towels.

  2. 2

    Season the Trout

In a small bowl, mix together olive oil, salt, and black pepper. Brush this mixture over both sides of the trout fillets.

  3. 3

    Preheat the Grill

Preheat your grill to medium-high heat (about 375-400°F or 190-200°C).

  4. 4

    Grill the Trout

Place the trout fillets skin-side down on the grill. Grill for about 5-7 minutes on each side, or until the fish flakes easily with a fork. Remove from the grill and serve with lemon wedges.

For the Garlic Butter Scampi Sauce

  1. 5

    Melt the Butter

In a medium saucepan over medium heat, melt the unsalted butter.

  2. 6

    Add Garlic

Once the butter is melted, add minced garlic to the saucepan and sauté for about 1-2 minutes until fragrant but not browned.

  3. 7

    Combine Ingredients

Stir in the chopped parsley, lemon juice, and red pepper flakes. Cook for an additional minute to combine the flavors.

For the Seasoned Rice

  1. 8

    Rinse the Rice

Rinse the long-grain white rice under cold water until the water runs clear.

  2. 9

    Cook the Rice

In a medium saucepan, heat olive oil over medium heat. Add the rinsed rice and sauté for 2-3 minutes.

  3. 10

    Add Broth and Seasonings

Pour in the chicken broth, then add salt and black pepper. Bring to a boil.

  4. 11

    Simmer the Rice

Reduce heat to low, cover, and let it simmer for about 18-20 minutes or until the rice is tender and the liquid is absorbed. Fluff with a fork before serving.
