Preparing the Salmon Bites

Cut the Salmon
Cut the salmon fillets into bite-sized cubes, about 1-inch pieces.

Prepare the Breading
In a bowl, combine all-purpose flour, cornstarch, salt, and black pepper. In another bowl, beat the egg. In a third bowl, place the panko breadcrumbs.

Bread the Salmon
Dredge each salmon cube in the flour mixture, dip it in the egg, and finally coat it with panko breadcrumbs. Ensure each piece is evenly coated.

Fry the Salmon
In a large skillet, heat olive oil over medium-high heat. Once hot, add the breaded salmon bites in batches. Fry until golden brown and crispy, about 2-3 minutes per side. Remove and drain on paper towels.
Cooking the Seasoned Rice

Rinse the Rice
Rinse the white rice under cold water until the water runs clear to remove excess starch.

In a medium saucepan, combine the rinsed rice, water, butter, garlic powder, onion powder, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 18-20 minutes or until the rice is tender and water is absorbed.

Once cooked, remove from heat and let it sit covered for 5 minutes. Fluff with a fork before serving.
Making the Yum Yum Sauce

Combine Ingredients
In a small bowl, whisk together mayonnaise, sriracha, sugar, rice vinegar, water, and garlic powder until smooth and well combined.
