    Prepare the Potatoes

    Peel the potatoes and cut them into thick fries. Rinse them under cold water to remove excess starch and pat them dry with a towel.

    Par-Cook the Fries

    Heat vegetable oil in a deep fryer or large pot to 325°F (160°C). Fry the potatoes in batches for about 5 minutes until they are soft but not browned. Remove and drain on paper towels.

    Make the Batter

    In a bowl, mix the flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the beer until you achieve a smooth batter.

    Fry the Fish

    Increase the oil temperature to 350°F (175°C). Dip each cod fillet into the batter, allowing the excess to drip off, then carefully place them in the hot oil. Fry for about 4-5 minutes until golden brown and cooked through. Remove and drain on paper towels.

    Finish the Fries

    Increase the oil temperature to 375°F (190°C). Fry the pre-cooked fries again in batches for about 3-4 minutes until golden and crispy. Drain on paper towels and season with salt.

    Serve

    Plate the fish and chips together, and serve with malt vinegar and tartar sauce on the side.
