    Prepare the Potatoes

    Preheat your oven to 400°F (200°C). Wash and scrub the russet potatoes thoroughly. Pat them dry with a towel.

    Bake the Potatoes

    Place the potatoes directly on the oven rack and bake for about 45-60 minutes or until they are tender when pierced with a fork. Remove from the oven and let them cool slightly.

    Prepare the Skins

    Once the potatoes are cool enough to handle, slice them in half lengthwise. Scoop out the insides, leaving about 1/4 inch of potato on the skin.

    Season the Skins

    Brush the potato skins with olive oil and sprinkle with salt and black pepper.

    Bake the Skins

    Place the potato skins on a baking sheet, cut side up, and bake in the preheated oven for an additional 10-15 minutes until they are crispy.

    Add Toppings

    Remove the potato skins from the oven and sprinkle the shredded cheddar cheese and crumbled bacon evenly over each skin. Return to the oven and bake for another 5-7 minutes or until the cheese is melted.

    Serve

    Remove from the oven, top with chopped green onions, and serve hot with sour cream on the side.
