    Prepare the Ingredients

    Cut the beef chuck roast into 1-inch cubes. Peel and chop the carrots and potatoes into bite-sized pieces. Dice the onion and mince the garlic.

    Sear the Beef

    In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the cubed beef and sear until browned on all sides. Remove the beef and set aside.

    Sauté the Vegetables

    In the same pot, add the diced onion and minced garlic. Sauté until the onion is translucent, about 5 minutes.

    Combine Ingredients

    Add the seared beef back into the pot along with the carrots, potatoes, Guinness, beef broth, tomato paste, bay leaves, thyme, salt, and black pepper. Stir to combine.

    Slow Cook the Stew

    Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 2 to 2.5 hours, or until the beef is tender and the flavors meld together.

    Remove the bay leaves before serving. Ladle the stew into bowls and enjoy hot.
