    Prepare the Fries

    Peel and cut the potatoes into thick strips. Rinse in cold water and pat dry.

    Fry the Potatoes

    Heat the vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potato strips in batches until golden and crispy, about 5-7 minutes. Remove and drain on paper towels. Season with salt.

    Make the Batter

    In a bowl, mix together the flour, cornstarch, baking powder, salt, and pepper. Gradually whisk in the cold beer until smooth.

    Fry the Fish

    Dip each cod fillet into the batter, allowing excess to drip off. Carefully place the battered fish into the hot oil and fry until golden brown, about 4-5 minutes per side. Remove and drain on paper towels.

    Prepare the Tartar Sauce

    In a small bowl, combine mayo, chopped pickles, lemon juice, and dill if using. Mix well and refrigerate until serving.

    Serve the hot fish with fries and a side of tartar sauce.
