Muddle
In a cocktail shaker or mixing glass, add the fresh mint leaves and simple syrup. Gently muddle the mint just enough to release the oils and aroma — avoid shredding the leaves to prevent excessive bitterness (about 6–8 gentle presses).
Build
Add the High Spirit Gin (2 oz), Green Chartreuse (1/2 oz), fresh lime juice (3/4 oz) and 2 dashes of Angostura bitters into the shaker with the muddled mint.
Shake
Fill the shaker with ice (large cubes or crushed), secure the lid and shake vigorously for 10–15 seconds until well chilled and slightly diluted.
Prepare glass
Fill a rocks glass or double old-fashioned glass with crushed ice (about 1 cup). If you prefer, chill the glass briefly beforehand.
Double-strain & serve
Double-strain the cocktail into the prepared glass over the crushed ice to remove mint fragments (use a Hawthorne strainer and a fine mesh strainer).
Garnish & finish
Garnish with a fresh mint sprig and a lime wheel or wedge. Optionally clap the mint between your palms before placing it on the drink to release the aroma. Serve with a short straw.
