Vegetable Filling Preparation

Prepare Vegetables
Wash and dice the zucchini, bell pepper, and onion into small pieces.

Slice Mushrooms & Mince Garlic
Slice the mushrooms and mince the garlic cloves.

Heat Olive Oil
In a large skillet, heat the olive oil over medium heat.

Sauté Onion
Add the diced onion and sauté until translucent, about 3-4 minutes.

Add Garlic
Add the minced garlic and cook for another minute until fragrant.

Cook Vegetables
Season with salt, black pepper, and dried Italian herbs, and continue to cook until the vegetables are tender, about 5-7 minutes.

Set Filling Aside
Remove from heat and set aside the vegetable filling.
Lasagna Assembly

Preheat Oven
Preheat your oven to 375°F (190°C).

Cook Lasagna Noodles
Cook the lasagna noodles according to package instructions until al dente, then drain and set aside.

Prepare Ricotta Mixture
In a bowl, mix the ricotta cheese with a pinch of salt and pepper.

First Layer
Spread a thin layer of marinara sauce at the bottom of a baking dish.

Layer Ricotta
Place 3 lasagna noodles over the sauce, then spread half of the ricotta mixture over the noodles.

Layer Vegetables
Add half of the vegetable filling over the ricotta layer.

Add Mozzarella
Sprinkle 1/3 of the mozzarella cheese over the vegetable filling.

Repeat Layers
Repeat the layering process: marinara sauce, noodles, ricotta, vegetables, and mozzarella.

Top Layer
Finish with a final layer of noodles, sauce, and the remaining mozzarella and Parmesan cheese on top.

Bake Covered
Cover the baking dish with aluminum foil and bake for 25 minutes.

Bake Uncovered
Remove the foil and bake for an additional 15 minutes until the top is bubbly and golden.

Cool and Serve
Once done, let the lasagna cool for 10 minutes before slicing and serving.
