Make the Sauce
In a small bowl, combine the soy sauce, sesame oil, minced garlic, minced ginger, cornstarch, and water. Whisk until the cornstarch is fully dissolved and the mixture is smooth.

Stir-Fry the Vegetables
Heat a large skillet or wok over medium-high heat. Add a splash of oil (if desired) and then add the broccoli, bell pepper, carrots, snap peas, and zucchini. Stir-fry for about 5-7 minutes, or until the vegetables are tender-crisp.

Add the Sauce
Pour the prepared sauce over the stir-fried vegetables. Continue to stir-fry for an additional 2-3 minutes, making sure all the vegetables are well coated and the sauce thickens slightly.
Serving

Garnish and Serve
If desired, sprinkle sesame seeds and chopped green onions over the stir-fry before serving. Serve hot on its own or over cooked rice or noodles.
