Cooking Pasta

Boil the Pasta
In a large pot, bring water to a boil. Add 1 tsp of salt and then add the pasta. Cook according to package instructions until al dente, usually about 8-10 minutes. Drain and set aside.
Sautéing Vegetables

Heat Olive Oil
In a large skillet, heat 2 tablespoons of olive oil over medium heat.

Add Remaining Vegetables
Stir in the zucchini, bell pepper, and cherry tomatoes. Cook for another 5-7 minutes until the vegetables are tender.

Add Spinach
Add the fresh spinach and cook until wilted, about 2 minutes.
Making the Sauce

Combine Sauce Ingredients
In a separate bowl, mix the canned crushed tomatoes with dried oregano, salt, black pepper, and chopped fresh basil.

Simmer the Sauce
Pour the tomato mixture into the skillet with the sautéed vegetables. Simmer on low heat for about 10 minutes.
Combining and Serving

Mix Pasta and Sauce
Add the drained pasta to the skillet with the sauce and vegetables. Toss well to combine everything evenly.

Serve
Serve hot, garnished with additional fresh basil if desired.
