Prepare Chicken

Season the Chicken
In a bowl, season the chicken breasts with salt, black pepper, and garlic powder. Ensure they are evenly coated.

Marinate in Buttermilk
Place the seasoned chicken in a zip-top bag or a bowl and pour in the buttermilk. Seal or cover, then refrigerate for at least 1 hour to overnight.

In a shallow dish, combine the all-purpose flour, cornstarch, cayenne pepper, salt, and black pepper. Mix well.
Fry Chicken

Heat Oil
In a deep skillet or fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Bread the Chicken
Remove the chicken from the buttermilk, allowing excess to drip off. Dredge each breast in the flour mixture, pressing to adhere.

Carefully place the breaded chicken in the hot oil. Fry for 7-8 minutes per side, or until golden brown and cooked through (internal temperature should reach 165°F/74°C).
