    Prepare the Patties

    In a mixing bowl, combine the ground beef, salt, and black pepper. Gently mix until well combined. Divide the mixture into 8 equal portions, shaping each portion into a 4oz patty.

    Cook the Patties

    Preheat a grill or skillet over medium-high heat. Cook the patties for about 4 minutes on one side. Flip the patties, place a slice of American cheese on each patty, and cook for an additional 3-4 minutes until the cheese is melted and the patties reach your desired doneness.

    Prepare Grilled Onions

    Slice the medium onion into thin rings. In a skillet, over medium heat, add a little oil and sauté the onions until they are soft and caramelized, about 10-15 minutes.

    Prepare Jalapenos

    Slice the jalapenos into rings. If you prefer less heat, remove the seeds before slicing.

    Make Candied Bacon

    In a skillet, cook the bacon until crispy. Remove from heat, sprinkle with brown sugar, and return to the skillet until the sugar is melted and caramelized, about 2-3 minutes.

    Prepare the Smoky Garlic Mayo

    In a small bowl, mix together the mayonnaise, minced garlic, smoked paprika, and lemon juice. Stir until well combined.

Assembly

    Assemble the Burger

    Toast the burger buns lightly. Spread a generous amount of smoky garlic mayo on the bottom half of each bun. Layer on a cheeseburger patty, followed by the grilled onions, jalapenos, candied bacon, and house-made pickles. Top with the other half of the bun.
