Veggie Patty Preparation

    Prepare the Quinoa

    Rinse the quinoa under cold water. In a medium pot, combine 1 cup of quinoa with 2 cups of water. Bring to a boil, reduce heat, cover, and simmer for about 15 minutes until water is absorbed. Fluff with a fork and set aside.

    Make the Veggie Mixture

    In a large mixing bowl, combine the black beans (mashed), cooked quinoa, grated carrot, chopped onion, minced garlic, cumin, paprika, salt, and black pepper. Stir until well mixed.

    Form the Patties

    Gradually add flour to the bean and veggie mixture until it holds together. Form mixture into patties, about 1/2 inch thick.

    Cook the Patties

    In a skillet, heat olive oil over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown. Remove from heat and set aside.

Assembly

    Prepare the Bun

    Slice the brioche bun in half and toast lightly if desired.

    Assemble the Burger

    Spread hummus on the bottom half of the bun. Place the cooked veggie patty on top, followed by sliced onion, sliced tomato, house pickles, and butter lettuce leaves. Top with the other half of the bun.

    Serve

    Serve immediately while warm. Offer lettuce wrap option for a low-carb alternative.
