Method

For the Patty

  1. 1

    Prepare the Patty

In a bowl, combine ground beef, salt, black pepper, and garlic powder. Form into 4 equal-sized patties, each weighing about 4 oz.

  2. 2

    Cook the Patty

Grill or pan-fry the patties over medium-high heat for about 4 minutes on each side, or until cooked to your desired doneness.

For the Smoked Brisket

  1. 3

    Prepare the Brisket

In a bowl, mix smoked paprika, brown sugar, garlic powder, onion powder, salt, black pepper, and liquid smoke. Rub this mixture all over the brisket.

  2. 4

    Slow Cook the Brisket

Place the brisket in a slow cooker with beef broth. Cook on low for 8 hours or until tender. Shred the brisket and keep warm.

For the Spicy Fried Onions

  1. 5

    Prepare the Onions

Slice the onion into thin rings and soak in buttermilk for 30 minutes.

  2. 6

    Fry the Onions

In a bowl, mix flour, cornstarch, cayenne pepper, and salt. Dredge the soaked onion rings in the flour mixture. Heat vegetable oil in a skillet over medium heat and fry the onions until golden brown, about 3-4 minutes. Drain on paper towels.

For the Pickles

  1. 7

    Prepare the Pickling Brine

In a saucepan, combine white vinegar, water, sugar, salt, and dill seeds. Bring to a boil and stir until the sugar and salt dissolve.

  2. 8

    Pickle the Cucumbers

Slice cucumbers into thin rounds and place them in a jar. Pour the hot pickling brine over the cucumbers. Let cool, then refrigerate for at least 2 hours before serving.

For the Chipotle BBQ Sauce

  1. 9

    Prepare the BBQ Sauce

In a bowl, mix ketchup, chipotle peppers in adobo sauce, brown sugar, apple cider vinegar, and salt until well combined. Set aside.

For Assembly

  1. 10

    Assemble the Burger

On a burger bun, layer the cooked patty, shredded smoked brisket, spicy fried onions, house-made pickles, and drizzle with chipotle BBQ sauce. Top with the other half of the bun and serve.
