Method

Preparation of Ingredients

  1. 1

    Melt Chocolate and Butter

In a heatproof bowl, combine the dark chocolate and unsalted butter. Set the bowl over a saucepan of simmering water (double boiler method) and stir until melted and smooth. Remove from heat and let it cool slightly.

  2. 2

    Prepare Baking Molds

Preheat your oven to 220°C (425°F). Grease four ramekins (6 oz size) with butter and dust with flour or cocoa powder to prevent sticking.

Mixing and Baking

  1. 3

    Combine Sugar and Eggs

In a mixing bowl, whisk together the granulated sugar, large eggs, and large egg yolks until the mixture is pale and slightly thickened.

  2. 4

    Incorporate Chocolate Mixture

Slowly add the melted chocolate and butter mixture into the egg mixture, stirring gently to combine. Add the vanilla extract and a pinch of salt.

  3. 5

    Add Flour

Sift the all-purpose flour over the chocolate mixture and fold gently until just combined. Do not overmix.

  4. 6

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling them about 2/3 full.

  5. 7

    Bake

Place the ramekins on a baking tray and bake in the preheated oven for 12-14 minutes, or until the edges are set but the center is still soft.

Serving

  1. 8

    Cool and Serve

Remove the ramekins from the oven and let them cool for 1-2 minutes. Carefully run a knife around the edges to loosen, then invert onto plates. Dust with powdered sugar and serve immediately with a scoop of vanilla ice cream for a delicious contrast.
