Cooking Chicken

Cook the Chicken
In a skillet over medium heat, cook the chicken breast for about 6-7 minutes on each side, or until fully cooked and juices run clear. Remove from heat and let rest.

Cook the Bacon
In the same skillet, cook the shoulder bacon over medium heat until crispy, about 3-4 minutes per side. Remove and drain on paper towels.
Assembling the Dish

Assemble the Chicken Bijan
On a serving plate, place a base of butter lettuce. Slice the cooked chicken breast and layer it on top of the lettuce. Spread the boursin-style cheese over the chicken slices, followed by the crispy bacon, fresh basil leaves, and sliced onion.

Drizzle the organic baba black sheep balsamic reduction over the top and finish with a dollop of truffle mayo.
