Preparation

    Marinate the Mushrooms

    Slice the king trumpet mushrooms into scallop-sized pieces. In a bowl, mix soy sauce, maple syrup, olive oil, garlic powder, and black pepper. Add the mushrooms and let them marinate for at least 30 minutes.

    Cook the Couscous

    In a saucepan, bring vegetable broth, olive oil, and salt to a boil. Stir in the tri-colored couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork.

    Prepare the Mint Smashed Peas

    In a pot, boil the frozen peas until tender (about 3-5 minutes). Drain and transfer to a bowl. Add fresh mint, lemon juice, and salt. Mash together with a fork until combined but still chunky.

    Make the Preserved Lemon Gel

    Blend the preserved lemons with water until smooth. In a small saucepan, heat the mixture and sprinkle in agar-agar. Stir until dissolved and let it cool to set.

    Sear the Mushrooms

    Heat a non-stick skillet over medium heat. Add the marinated mushrooms and sear for about 3-4 minutes on each side until golden brown.

Plating

    Serve the Dish

    On a plate, create a bed of tri-colored couscous. Top with the pan-seared mushroom scallops, spoon the mint smashed peas beside it, and drizzle with preserved lemon gel. Garnish with zested black limes and microgreens.
