Prepare the Salmon Mixture
In a large mixing bowl, combine the canned salmon (drained), bread crumbs, buttermilk, chopped dill, Tabasco sauce, chopped cornichons, and lemon zest. Mix well until all ingredients are combined.

Season the Mixture
Season the mixture with salt and black pepper to taste. Make sure to taste the mixture and adjust seasoning as necessary.

Form the Cakes
Shape the mixture into patties, about 3 inches in diameter and 1 inch thick. You should get about 6 patties.

Cook the Salmon Cakes
In a large skillet, heat the olive oil over medium heat. Once hot, add the salmon cakes and cook for 4-5 minutes on each side or until golden brown and cooked through.

Prepare the Garnish
While the salmon cakes are cooking, prepare the watercress and radishes for garnish. Arrange them on a serving plate.

Serve
Once the cakes are cooked, place them on the serving plate with watercress and radish. Drizzle with additional Tabasco sauce if desired.
