Cream Butter and Sugar
In a mixing bowl, cream together 100g of unsalted butter and 150g of brown sugar until light and fluffy.

Add Eggs and Vanilla
Beat in the 2 large eggs, one at a time, along with 1 tsp of vanilla extract, mixing well after each addition.

Mix Dry Ingredients
In a separate bowl, whisk together 150g of all-purpose flour, 1 tsp of baking powder, and a pinch of salt.

Bake
Preheat the oven to 180°C (350°F). Pour the batter into a greased baking dish and bake for 30-35 minutes until a skewer inserted in the center comes out clean.
Toffee Sauce

Make the Sauce
In a saucepan, melt 100g of unsalted butter over medium heat. Stir in 150g of brown sugar and cook for 2-3 minutes until dissolved.

Add Cream
Gradually whisk in 200ml of heavy cream and bring the mixture to a gentle boil. Reduce the heat and let it simmer for 5 minutes until it thickens slightly.
Serving

Serve the Pudding
Cut the sticky toffee pudding into squares and place a piece on each plate. Drizzle generously with the toffee sauce and serve warm with a scoop of vanilla ice cream.
