Method

Preparation of Marinade

  1. 1

    Combine Marinade Ingredients

In a bowl, mix together the olive oil, minced garlic, chopped fresh rosemary, salt, black pepper, and lemon juice until well combined.

Marinating the Steak

  1. 2

    Marinate Rib-eye

Place the rib-eye steaks in a large resealable plastic bag or a shallow dish. Pour the marinade over the steaks, ensuring they are well coated. Seal the bag or cover the dish and marinate in the refrigerator for at least 1 hour, or up to overnight for more flavor.

Cooking the Steak

  1. 3

    Preheat Grill or Pan

Preheat a grill or a skillet over medium-high heat. If using a grill, make sure the grates are clean and well-oiled.

  2. 4

    Cook Rib-eye Steaks

Remove the steaks from the marinade, allowing excess marinade to drip off. Place the steaks on the grill or in the skillet. Cook for about 4-5 minutes per side for medium-rare, or longer depending on your preferred doneness.

  3. 5

    Rest the Steak

Once cooked to your liking, remove the steaks from the heat and let them rest for 5-10 minutes before slicing. This allows the juices to redistribute.

Cooking the Side Dish

  1. 6

    Prepare Asparagus

While the steaks are resting, toss the trimmed asparagus with olive oil, salt, and black pepper in a bowl.

  2. 7

    Sauté Asparagus

In the same skillet used for the steaks or in a separate pan, sauté the asparagus over medium heat for about 5-7 minutes, or until tender but still crisp.

Serving

  1. 8

    Plate and Serve

Slice the rib-eye steaks against the grain and serve them alongside the sautéed asparagus. Enjoy your delicious Sixth Rib-eye!
