Steak Preparation

Season the Steak
Take the rib eye steaks and pat them dry with paper towels. Season both sides generously with salt and black pepper.

Preheat the Grill
Preheat your grill to high heat, around 450-500°F (232-260°C).

Rest the Steak
Remove the steaks from the grill and let them rest for at least 5 minutes before slicing.
Chimichurri Preparation

Combine Ingredients
In a bowl, combine the chopped parsley, chopped oregano, minced garlic, red wine vinegar, red pepper flakes, and salt.

Add Olive Oil
Slowly whisk in the olive oil until the chimichurri is well combined and emulsified.

Adjust Seasoning
Taste and adjust seasoning with more salt or red pepper flakes if needed.

Serve
Serve the chimichurri alongside the grilled rib eye steak.
