Cut the marrow in half lengthwise and scoop out the seeds. You should have about 2 cups of marrow ready for use.

Peel the garlic cloves and mince them finely. Set aside.
Cooking

Cook the Marrow
In a medium-sized pan, heat 1 tablespoon of olive oil over medium heat. Add the marrow halves, cut side down, and cook for about 5-7 minutes until they are tender. Remove from heat and let cool slightly.

In the same pan, add another tablespoon of olive oil and the minced garlic. Sauté for 2-3 minutes until the garlic becomes fragrant and golden, being careful not to burn it.

In a food processor, combine the cooked marrow, sautéed garlic, remaining tablespoon of olive oil, lemon juice, salt, and black pepper. Blend until smooth and creamy. Adjust seasoning to taste.
