Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 375°F (190°C) to prepare for roasting the meats.

  2. 2

    Prepare the Meats

In a large bowl, combine the Beef, Lamb, and Pork roasts. Rub each roast with olive oil and season generously with salt, black pepper, garlic powder, onion powder, rosemary, and thyme.

  3. 3

    Prepare the Vegetables

Peel and chop the carrots and potatoes into large chunks. Quarter the onions. Set aside.

Cooking

  1. 4

    Sear the Meats

In a large skillet over medium-high heat, sear each roast for about 3-4 minutes on each side until browned. This helps to lock in the flavors.

  2. 5

    Arrange in Roasting Pan

Place the seared roasts in a large roasting pan. Arrange the carrots, potatoes, and onions around the meats.

  3. 6

    Add Broth

Pour the beef broth over the roasts and vegetables to add moisture during cooking.

  4. 7

    Roast the Meats

Cover the roasting pan with aluminum foil and place it in the preheated oven. Roast for about 2 to 2.5 hours, or until the internal temperature of the roasts reaches at least 145°F (63°C) for medium rare.

Serving

  1. 8

    Rest and Serve

Once cooked, remove the roasts from the oven and let them rest for at least 15 minutes before slicing. Serve with the roasted vegetables on the side.
