Preheat the Oven

Preheat your oven to 425°F (220°C) to ensure it’s hot enough to roast the chicken properly.

Prepare the Chicken

Rinse the whole chicken under cold water and pat it dry with paper towels. Ensure the cavity is clean.

Season the Chicken

In a small bowl, mix olive oil, salt, black pepper, garlic powder, and paprika. Rub this mixture all over the chicken, including inside the cavity.

Add Aromatics

Stuff the cavity of the chicken with fresh rosemary and the halved lemon. This will infuse flavor during roasting.

Chop the Vegetables

Peel and chop the carrots and potatoes into large chunks. Peel and quarter the onion.

Arrange Vegetables

Place the chopped vegetables in a large roasting pan. Drizzle with a little olive oil and sprinkle with salt and pepper, tossing to coat evenly.
