Method

Preparation of Rib-eye

1

Season the Steak

Take the rib-eye steaks out of the refrigerator and let them sit at room temperature for about 30 minutes. Season both sides generously with salt and black pepper.

2

Prepare the Cooking Surface

Heat olive oil in a large skillet or grill pan over medium-high heat until shimmering.

Cooking the Rib-eye

3

Sear the Steak

Add the rib-eye steaks to the hot skillet. Sear them for about 4-5 minutes on one side without moving them.

4

Flip and Add Flavor

Flip the steaks over and add whole garlic cloves and rosemary sprigs to the pan. Sear for another 4-5 minutes for medium-rare, or longer depending on your preferred doneness.

5

Baste the Steaks

Tilt the pan slightly and use a spoon to baste the steaks with the rendered fat and juices. This enhances the flavor and tenderness.

6

Rest the Steaks

Remove the steaks from the skillet and place them on a cutting board. Let them rest for about 5-10 minutes before slicing.

Optional Side Preparation

7

Prepare Asparagus

While the steak is resting, trim the ends of the asparagus and toss them with olive oil, salt, and pepper. Sauté them in the same skillet for about 5-7 minutes until tender.

8

Prepare Potatoes

Boil the potatoes until fork-tender, about 15-20 minutes. Drain and toss with butter, salt, and chopped parsley if desired.
