Prepare equipment

    Line a small baking tray or a 12-cup mini muffin tin with mini paper or silicone liners if using. If not using liners, line the tray with parchment and lightly oil a small spoon.

    Have two heatproof bowls ready for a double boiler (or use a microwave-safe bowl). Measure ingredients before starting.

Make the chocolate base

    Melt chocolate and butter

    Place the semisweet chocolate chips and unsalted butter in a heatproof bowl. Set the bowl over a simmering pot of water (double boiler), making sure the bowl does not touch the water. Stir gently until fully melted and smooth, about 3–5 minutes. Alternatively, microwave in 20–30 second bursts, stirring between bursts, until melted.

    Add cocoa and syrup

    Remove the bowl from heat. Whisk in the sifted cocoa powder, light corn syrup (or honey), and a pinch of fine sea salt until glossy and combined. Let the mixture cool for 4–6 minutes so it slightly thickens but remains pourable.

Prepare the creamy center

    Heat cream

    In a small saucepan, warm the heavy cream over medium-low heat until it just begins to steam and small bubbles form at the edge (do not boil). Remove from heat.

    Make cream mixture

    In a medium bowl, beat the softened cream cheese until smooth. Slowly pour the warm cream over the cream cheese while whisking until smooth and homogenous. Add the powdered sugar and vanilla extract and whisk until dissolved and the filling is glossy. Let the filling cool to room temperature (about 8–10 minutes) so it thickens slightly; if it gets too soft, chill 10 minutes in the fridge.

Assemble Choco Bites

    Form chocolate cups

    Spoon about 1 teaspoon of the cooled chocolate base into each liner or onto the parchment to form a small round base (you should have enough for 12 pieces). Using the back of the spoon, spread a small rim up the sides so each piece forms a shallow cup. Place the tray in the refrigerator for 5 minutes to set the chocolate base.

    Add filling

    Remove the tray from the fridge. Using a small spoon or piping bag, fill each chilled chocolate cup with about 1 teaspoon of the creamy center, leaving a small gap at the top for a final thin chocolate layer.

    Top with chocolate

    Rewarm the remaining chocolate base briefly if it has stiffened (hold over the warm double boiler and stir until pourable). Spoon about 1 teaspoon of chocolate over each filled bite to seal the filling. Tap the tray gently on the counter to level the tops and remove air pockets.

    Add finishing touches

    Sprinkle toasted chopped nuts on some bites if using, and finish a few with a tiny pinch of sea salt flakes. Optionally dust a few with cocoa powder after the chocolate sets for a rustic look.

    Chill the assembled Choco Bites in the refrigerator for 20–30 minutes, or until completely firm.

Serve and store

    Remove Choco Bites from liners and arrange on a serving plate. Serve chilled or at cool room temperature.

    Store leftovers in an airtight container in the refrigerator for up to 7 days. For longer storage, freeze in a single layer on a tray until firm, then transfer to a freezer-safe container for up to 3 months. Thaw in the refrigerator before serving.
