Cook the Pappardelle
In a large pot of salted boiling water, cook the pappardelle pasta according to package instructions until al dente. Drain and set aside, reserving 1 cup of pasta water.

Sauté the Mushrooms
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant. Add the wild mushrooms and cook for 5-7 minutes until they are tender and golden brown.

Add Arugula and Season
Stir in the arugula, truffle oil, salt, and black pepper. Cook for an additional 2-3 minutes until the arugula has wilted.

Serve
Divide the pappardelle into serving bowls and top with shaved Parmesan cheese. Drizzle with additional truffle oil if desired.
