    Prepare the Celery Root Soubise

    Peel and dice the celery root. In a saucepan, melt 2 tablespoons of butter, add minced garlic, and sauté until fragrant. Add the diced celery root and enough water to cover it. Simmer until tender, about 20 minutes. Drain excess water and blend with heavy cream until smooth. Season with salt and pepper to taste.

    Pan-Seared Salmon

    Season the salmon fillets with salt and pepper. Heat olive oil in a skillet over medium-high heat. Cook the salmon fillets skin-side down for about 4-5 minutes until crispy. Flip and cook for another 3-4 minutes until cooked through. Remove from the skillet.

    Maple Glazed Brussels Sprouts

    Trim and halve the Brussels sprouts. In the same skillet, melt the remaining 2 tablespoons of butter over medium heat. Add the Brussels sprouts and sauté until golden brown, about 8-10 minutes. Drizzle with maple syrup and cook for an additional 2 minutes until caramelized.

    Plate the Dish

    On each plate, spread a generous spoonful of celery root soubise, arrange the pan-seared salmon on top, and garnish with the maple-glazed Brussels sprouts.
