Prepare the Chocolate Mixture
Preheat your oven to 200°C (around 400°F). In a heatproof bowl, melt the dark chocolate and unsalted butter together over a pot of simmering water, stirring until smooth.

Combine Ingredients
In a separate bowl, whisk together the eggs, granulated sugar, and vanilla extract until pale and fluffy. Gradually fold in the melted chocolate mixture, then sift in the flour and salt, mixing until just combined.

Bake the Cakes
Grease individual ramekins and pour the batter into each, filling them about 2/3 full. Bake for 10-12 minutes until the edges are set but the center is still soft. Remove from oven and let cool for 1-2 minutes.

Serve
Carefully run a knife around the edges of each ramekin and invert onto a plate. Serve immediately with a scoop of vanilla bean ice cream and drizzle with raspberry coulis.
