Mashed Red Bliss Potatoes

    Prepare the Potatoes

    Wash the red bliss potatoes under cold water. Peel them if desired, then cut them into quarters for even cooking.

    Boil the Potatoes

    Place the quartered potatoes in a large pot and cover with cold water. Add a pinch of salt. Bring to a boil over medium-high heat and cook until tender, about 15-20 minutes.

    Prepare the Scallions

    While the potatoes are boiling, finely chop the scallions, both the white and green parts.

    Drain and Mash

    Once the potatoes are tender, drain them well and return them to the pot. Add butter, milk, and a pinch of salt and pepper.

    Combine Ingredients

    Using a potato masher or a fork, mash the potatoes until smooth. Stir in the chopped scallions and adjust seasoning with additional salt and pepper, as desired.

    Serve

    Transfer the mashed potatoes to a serving bowl and garnish with additional scallions if desired. Serve warm.
