Make the Caesar Dressing
In a bowl, combine mayonnaise, anchovy paste, Dijon mustard, minced garlic, lemon juice, Worcestershire sauce, salt, and black pepper. Whisk until smooth and well combined. Slowly drizzle in olive oil while whisking to create a creamy dressing. Adjust seasoning to taste.

Prepare the Croutons
Preheat the oven to 375°F (190°C). Cut brioche bread into small cubes and spread them on a baking sheet. Drizzle with a little olive oil and season with salt and pepper. Bake for about 10-12 minutes or until golden and crispy.

Assemble the Salad
Chop the hearts of romaine into bite-sized pieces and place them in a large salad bowl. Add in the shaved parmesan cheese. Pour the prepared Caesar dressing over the salad and toss gently to combine. Top with the brioche croutons.
