Prepare the Pie Crust
Crush the chocolate sandwich cookies into fine crumbs. Mix the crumbs with melted unsalted butter until well combined. Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan. Bake at 350°F (175°C) for 10 minutes. Allow to cool.

Make the Mint Cream Filling
In a mixing bowl, combine cream cheese, powdered sugar, and peppermint extract. Beat until smooth. Fold in whipped cream gently until well combined. Pour the mint cream filling into the cooled chocolate cookie crust and spread evenly.

Chill the Pie
Refrigerate the pie for at least 4 hours or until set.

Slice the pie and serve chilled. Optionally, garnish with additional whipped cream and chocolate shavings.
