Step 2: Cook the Garlic
While the potatoes are boiling, peel the garlic cloves and add them to a small pot with enough water to cover them. Bring to a boil, then simmer for about 10 minutes. This will mellow the garlic flavor.

Pat the filet mignon dry with paper towels. Season both sides generously with salt and black pepper.
