Prepare the crust
Preheat your oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix well until the crumbs are evenly coated with butter.

Form the crust
Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove from the oven and set aside to cool.

Make the filling
In a large mixing bowl, beat together cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Then mix in sour cream, vanilla extract, and flour until fully combined.

Bake the cheesecake
Pour the filling over the cooled crust in the springform pan. Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly.

Cool and refrigerate
Turn off the oven and crack the door open, allowing the cheesecake to cool slowly for about an hour. Then refrigerate for at least 4 hours, preferably overnight, before serving.
