Slice the Tomatoes
Wash the green tomatoes and slice them into 1/4 inch thick rounds.

Prepare the Breading Stations
Set up three shallow dishes: one with flour mixed with salt, pepper, and cayenne, one with buttermilk, and one with cornmeal.

Dredge the Tomatoes
Coat each tomato slice first in the flour mixture, then dip it in the buttermilk, and finally coat it in cornmeal. Ensure they are well coated.

Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat until hot.

Fry the Tomatoes
Carefully add the breaded tomato slices to the hot oil in batches. Fry for about 3-4 minutes on each side or until golden brown.

Drain and Serve
Remove the fried tomatoes from the skillet and place them on paper towels to drain excess oil. Serve hot with spicy remoulade.
