Directions

  1. 1

    Cook the Bacon

In a large pot, cook the chopped bacon over medium heat until crispy. Remove the bacon and set aside, leaving the drippings in the pot.

  2. 2

    Sauté Vegetables

Add the butter to the pot with the bacon drippings. Once melted, add the onion, celery, and garlic. Sauté until the vegetables are softened.

  3. 3

    Add Flour

Stir in the flour and cook for about 1-2 minutes to create a roux.

  4. 4

    Add Liquids

Gradually whisk in the chicken broth, ensuring there are no lumps. Add the diced potatoes, clams, thyme, and bay leaf.

  5. 5

    Simmer

Bring to a boil, then reduce heat and let simmer for about 15 minutes, or until the potatoes are tender.

  6. 6

    Add Cream and Season

Stir in the heavy cream, and season with salt and pepper to taste. Heat through, but do not boil.

  7. 7

    Serve

Ladle the chowder into bowls and top with the crispy bacon bits. Enjoy!
